Curry sauces are used in the popular curry dishes of Asian cusine. Typically made from a variety of spices and vegetables they are readily available in jars and tins for quick curry cooking.

Curry Sauce
These sauces are used to make curry dishes in Indian, Thai, Chinese and other South Asian cuisines and are made from various spices and vegetables like onions and tomatoes. There are many different types of curry and it is the sauce used in each dish that largely dictates the intensity of the flavour and spice, ranging from mild korma dishes to the more spicy madras curries.
Of course curry has also become a popular part of western culture and there is a wide range of ready made canned curry sauces available to buy in these countries. These easy to use sauces are simply poured over quickly cooked meat, fish or vegetables and simmered until the dish is thoroughly cooked.

Curry sauce recipe
|
Many people still prefer to make their own sauces to add a more traditional or authentic flavour to their curry dishes. The recipe below is for a basic curry sauce and makes between 8 and 9 fl oz of sauce which is enough for 2 main course curries or a main course and some side dishes.
1. Heat 3 tablespoons of vegetable oil in a heavy pan then add a chopped medium onion and stir for a few minutes with the heat on high.
2. Add a peeled and thinly sliced 1.5 inch piece of root ginger and 4 peeled and thinly sliced cloves of garlic. Stir for 30 seconds then put the heat down to very low.
3. Cook for 15 minutes stirring from time to time making sure nothing browns or burns.
4. Add half teaspoon turmeric, cumin and coriander and cook, still very gently, for a further 5 minutes.
5. Take off the heat and cool a little. Put 4 fl oz cold water in a blender, add the contents of the pan and whizz until very smooth. Add 5 tablespoons of plain passata and stir.
6. Put the puréed mixture back into the pan and cook for 20 - 30 minutes (the longer the better) over very low heat stirring occasionally. You can add a little hot water if it starts to catch on the pan but the idea is to gently "fry" the sauce which will darken in colour to an orangy brown. The final texture should be something like good tomato ketchup. (Taken from curryhouse.co.uk)
