Curry is thought of primarily as an Indian invention but chicken curry dishes can be found in the cuisine of many countries. Check out recipes for Indian, Thai and Barbados chicken curries.


Chicken Curry

When people think of curry they quite rightly think of the wonderfully spiced dishes that originated in India, Pakistan and Bangladesh. Yet there are many curry dishes that come from other countries and regions of the world. On this page you will find recipes for chicken curries from Thailand and Barbados as well as India.

Indian Chicken Curry Recipe

Ingredients
1 tbsp Oil
10g Butter
3 Cloves Garlic, crushed
1 Medium Onion, finely chopped
2 tbsp Garam Masala
1 tsp Ground Coriander
½ tsp dried mint
570g Boneless, Skinless Chicken Breast, diced
200 ml water

Method
1. Heat the oil and butter in a wok or large, heavy frying pan. Add the garlic and onion and stir fry for about 5 minutes until onion is golden.
2. Stir in the garam masala, coriander and mint. Add the chicken and cook over a moderate heat for 5 minutes, stirring occasionally.
3. Add the water, stir, and simmer without a lid for 10-15 minutes until the chicken is cooked and sauce has thickened.

If you like fresh coriander, stir in a tablespoon, chopped, prior to serving. (Taken from weightlossresources.co.uk)

Thai Penang Curry Chicken Recipe

Penang is a dry Thai curry, probably originally "imported" from Malaysia. It can be prepared with any meat, and many fishes. This recipe is for a chicken curry.

Ingredients
1 cup chicken, cut into bite sized pieces
1/2 cup coconut milk
1 tablespoon chopped garlic
2 to 3 tablespoons Penang curry paste
2 tablespoons fish sauce
sugar to taste
3 kaffir lime leaves, shredded
10-15 Thai basil leaves, finely shredded

Method
Place a wok over medium high heat, and warm the coconut milk, but don't let it boil. Add the curry paste, and stir it until the oil begins to separate out and form a thin film, to bring out the maximum flavor. Add the remaining ingredients except the lime leaves and basil leaves, and simmer until the sauce is absorbed and thickened. Add the lime leaves and basil leaves and stir fry briefly before serving.

Garnish with julienned red chili, with Thai jasmine rice, and the usual Thai table condiments. (Taken from importfood.com)


Barbados Banana Chicken Curry Recipe

Ingredients
4 chicken pieces
2 tbsp flour
1 tsp salt
4 tsp curry powder
oil for frying
2 bananas
1 cup rice
2-3 limes

Method
Mix the flour, salt and curry powder and coat the chicken with it. Fry the chicken in the oil until golden brown and then reduce the heat, cover and cook for further 15 min. until tender. Slice bananas and add them to cook for 5 min. Meanwhile cook the rice in boiling salted water for about 20 min until tender, adding 1/2 a lime.

To serve spread the rice on a serving dish, add the chicken and banana pieces and garnish with slices of lime.
