Rice and curry
Rice and curry

Indian cuisine is as diverse as its culture, languages, regions and its climate. Every major region of India has its own unique curry dishes and subtle variations. These dishes have spread across the world and now currys are just as popular in the West as they are in the East. Curry sauces and powders are prominent in Western supermarkets and recipes have been modified for a new breed of curry eater.

Tomato and cardamom are at the heart of this medium spicy sauce dish from the Kashmir region of India. Traditionally made with lamb (Josh or Gosht means lamb), Rogan Josh currys are equally delicious with chicken, beef or vegetables.
